Chinese food in Melbourne is seeing somewhat of a revival.
For almost a century it was practically the only Asian food easily available in Melbourne. During that period, it was often dumbed-down to the Anglo-Saxon palate with the result that the average Chinese take-away is often cheap but not particularly good.
A number of restaurants offer excellent regional Chinese food at medium to higher prices (The Flower Drum has recently been acclaimed the best Chinese restaurant outside China), but it is currently harder to find really good Chinese food at low prices.
In particular, beware of a certain style of fast noodle outlet (often served in a "noodle box"). Most of the ingredients are parboiled in advance, and, although cooked in a wok, are usually stewed in a sauce in the American style rather than the healthier and tastier fresh Asian stir-fry. This is simply a modern, glossier Gen-X version of dumbing down. If in doubt, look for roast ducks and pork hanging in the front window - it is often a good indicator of a fresher, cheaper and more authentic Chinese meal.
