Preserved lemons - we make our own. In Australia, preserved lemons are available at delicatessens and Middle Eastern food stores, but are usually hideously overpriced. They are easy to make so we make sure that we buy lemons when they are cheap (ie when they are in season locally) and preserve a number of batches. Dried mushrooms - they have a long shelf life and can be reconstituted in a relatively short time to give a substantial flavour hit to many dishes
