Crumbing

Crumbing

Take three bowls.

  • In the first bowl, place some plain flour and season with freshly ground pepper and salt
  • In the second bowl, crack an egg, add two tablespoons of milk and whisk lightly with a fork
  • In the third bowl place breadcrumbs

Take food and coat lightly in flour, then dunk in the egg wash, and finally coat with the breadcrumbs.

(Hint: I use my left hand for the first two steps and dropping the food into the breadcrumbs, then my right hand to toss in the breadcrumbs and then often place the food straight into the pan. This leaves my right hand dry for handling pans etc.)

Pointers:

  • Packet breadcrumbs are often better than home made for this purpose because they are usually drier

Variations:

  • Add parmesan to the breadcrumbs - about one third freshly ground parmesan cheese to two thirds breadcrumbs
